Pork Rind Pesto Bites

Ingredients
• 1/2 cup Southern Recipe Small Batch Sea Salt & Cracked Black Pepper pork rinds, crushed
• 1 1/2 heads Cauliflower, steamed, mashed
• 1/2 cup Almonds, crushed
• 1 cup Romano cheese, shredded
• 1 Egg
• 1 cup Pesto
• 12-15 Mozzarella balls, mini
• 1/2 cup Bread crumbs, panko
• Olive oil, for drizzling
Directions
1. Steam cauliflower and mash until smooth.
2. Mix cauliflower with almonds and Romano cheese. Stir to combine.
3. Add egg and pesto. Mix well.
4. On a plate, combine pork rinds and panko bread crumbs.
5. Form palm-sized balls from cauliflower mixture. Insert 1 mozzarella ball in center of each and shape mixture around it.
6. Roll each ball in pork rind mixture. Place on parchment-lined baking sheet.
7. Drizzle with olive oil. Bake at 400°F for 25 minutes, until golden brown.F.
