Keto Pumpkin Muffins

Ingredients:
1/2 cup Southern Recipe Small Batch Pork Rinds, crushed
3/4 cup pumpkin puree
1/2 cup butter, melted
4 eggs, beaten
2/3 cup erythritol sweetener
1 1/2 cups almond flour
4 tsp. baking powder
1/2 tsp. nutmeg
1/2 tsp. salt
1 tsp. vanilla extract
Directions:
1. Preheat oven to 350°F.
2. In a large bowl, mix the pumpkin puree, melted butter, beaten eggs, and erythritol sweetener thoroughly.
3. Add remaining dry ingredients, mixing regularly.
4. Fill a greased muffin tin with the batter.
5. Bake for 30 minutes or until golden brown.
