Ingredients:
1 Tbsp. Southern Recipe Small Batch Pork Rinds, crushed
8 Eggs, beaten
1 cup Mushrooms, chopped
1 cup Red bell pepper, diced
1 Tbsp. Garlic, minced
4 Scallions, chopped
3 Tbsp. Heavy Cream
4-5 slices Bacon, cooked and chopped
4-5 slices Ham, diced
1/2 tsp. Salt
1/2 tsp. Black pepper
Your favorite hot sauce or cheese top as a topping (optional)
Directions:
In a large bowl, combine all of the ingredients, whisking until the eggs are fully beaten and incorporated with the rest of the ingredients.
In a well-sprayed waffle iron, pour small batches of the egg mixture into each side.
Close the waffle iron, and allow to cook through, roughly 5 minutes.
