Ingredients:
1/2 cup Southern Recipe Small Batch Apple Cinnamon pork rinds, crushed
1 cup All-purpose flour
¼ cup Dark brown sugar
2 ½ tsp. Baking powder
1 tsp. Salt
1 tsp. Cinnamon
2 Eggs, beaten
2 tps. Vanilla extract
2 Apples, diced
2 tbsp. Butter, melted
1-2 tbsp. Lemon juice
Powdered sugar (optional)
Directions:
Preheat air fryer to 350 degrees F.
In a medium-sized bowl, mix the apples, butter, and lemon juice. Set aside.
In a large bowl, mix the crushed pork rinds, all-purpose flour, dark brown sugar, baking powder, salt, and cinnamon. Set aside.
In a small bowl, combine the beaten eggs and vanilla extract until well-combined. Pour this mixture over the diced apples. Mix until fully combined.
Pour the apple mixture into the flour mixture, and mix thoroughly.
Place heaping spoonfuls of the apple fritter mixture into the greased air fryer.
Cook for 5-10 minutes or until golden brown.
Serve with a simple powdered sugar glaze and a dusting of powdered sugar (optional).
